Winemaker Katie Vogt’s Summer Chimichurri

A vibrant, herb-driven sauce to elevate grilled ribeye.


Ingredients (serves 4)

  • 1½ cups fresh parsley leaves, chopped
  • ½ cup fresh cilantro leaves, chopped
  • 2 tablespoons chopped fresh oregano
  • 2 cloves garlic, finely chopped
  • 1 small shallot, finely chopped
  • 1 teaspoon red pepper flakes (adjust to taste)
  • ½ cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Kosher salt, or to taste

Instructions

  1. In a bowl, mix all ingredient except for the oil and vinegar.
  2. Gently stir in the vinegar and then the olive oil.
  3. Let rest for at least 20 minutes before serving. (May be refrigerated for up to one day. Bring to room temperature before serving.) Taste and adjust seasoning as needed.


Serving Suggestion:
Spoon generously over grilled ribeye, roasted vegetables, or warm crusty bread.

The Perfect Baked Potato

Russet potatoes are ideal for baking. Their high starch content yields a light, fluffy interior, and their thick skins crisp beautifully in the oven. Select firm, unblemished russets — about 8–10 ounces each — for even cooking.


Preparation

  1. Scrub thoroughly under cold water and dry completely.
  2. Prick each potato 2–3 times on each side with a fork.
  3. Rub the skins with olive oil and sprinkle generously with kosher salt.


Baking

  1. Preheat oven to 425°F.
  2. Place potatoes directly on the oven rack.
  3. Bake for approximately 50 minutes, turning once halfway through. A paring knife should slide easily through the center, and the skin should feel crisp.
  4. Let rest a few minutes before slicing open to serve.
